Inside the last winter fantasy food show and what

“Innovation” is not only a fashionable word for the Specialty Food Association, which reinvents the Fantasy Fancy 2025 food show as Winter Fancyfaire * in 2026. In its final iteration as a Food Food Fair , 12,000 professionals from the food industry went down to Las Vegas for the fourth consecutive year, to taste the latest F&B and network innovations with industry professionals.

Everything went from January 19 to 21 in the West Hall of Las Vegas Convention Center Center of Las Vegas Convention Center, where 1,100 exhibitors – of which 180 were beginners – from all over the world exhibited in 45 specialized categories, including popular flavors like Yuzu Japanese citrus and black truffle, as well as trends such as recycled packaging. “We have remained consistent in our figures,” said the main vice -president of SFA marketing and communications, Leana Salamah about attendance and exhibitors at the Winter Fancy show of 2025 – the 49th of the genre.

Coherence was not, well, consistent, throughout the show, however. Salamah underlined the commitment of SFA to “innovation and the trend” with each of its shows. Consequently, “this year’s event has given the participants’ appetite for discovery and innovation,” she said, pointing to these five new show features that took the scene:

  • The Spark Showcase area was new in the exhibition hall “where we (SFA) co-organized a daily programming,” said Salamah.
  • Interactive Ask the Experts Sessions at the show took place in a “space dedicated to individual sessions and in small groups where participants and exhibitors could receive personalized advice from industry professionals”, she shared.
  • The first experience of taste was the very first Winter Fancy Food Show food room which had the most recent products on the market. Each day of the show, the experience took different themes (global flavors on the first day, holiday treats on the second day and the main trends on the third day).
  • After making his debut at the 2024 Summer Food Show, the first district was launched during a winter fantasy food fair. This is where the first exhibitors, exhibitors with new products, startups and incubators had the opportunity to present their products among the most frequented areas in the show.
  • SFA Maker’s first preparation diploma was “a celebration of the first class of manufacturers to complete the six -month -old preparation course,” said Salamah.

The SFA has crowned the three -day itinerary with a major announcement: as it seems in the first stage of the anniversary of the Winter Fancy Food Show, “Innovation” will stay high as it changes brand Winter Fancyfaire *.

In case you ask yourself the question, the asterisk of the new name of the show is intentional, representing a snowflake for the winter season. And in another wink in winter, the first plan of fantasy * – The place from January 11 to 13, 2026 – will focus on “products and inspiration for vacation purchases”, according to Salamah .

The redesigned show will find a new house at the San Diego Convention Center Center, with plans to go to new destinations each year (San Francisco is already in books for 2027.). When asked how SFA plans to choose its locations in the future, Salamah said, perhaps without surprise, that it comes down to the tastes of the public. The SFA “will make our decision for the 2028 shows and beyond the place where we think will offer the best possible experience for exhibitors and participants,” she said.

Although it is not immediately clear if one of the new features of the Food Show would come back for Fancyfaire *, Salamah has been teasing that there will be “new experiences – and for a new audience”.
